Prepping fresh veggies for the week will help you utilize your fresh produce and keep them from wasting away in the produce drawer!
If you are like me, there is always something or someone vying for my time and attention. This can consume my time and make it difficult to stay on plan when mealtimes come around.
Prep those freshies!
Take half an hour or so when you get home from the grocery store to chop and bag up your freshies into easy-to-grab servings to help you eat those veggies you bought with great intentions.
When you are making meals, roast a large sheet pan of non-starchy freshies (double the recipe to have leftovers for another meal). This is one of my favorite ways to eat fresh veggies as a delicious side dish to any meal. I am always glad I took the time to double the recipe. I find that roasted veggies take on a whole new flavor profile that is savory and delicious!
Keep those greens fresh by placing a few paper towels in the bottom and top of the clamshell of spinach or mixed greens. This helps eliminate excess moisture to keep your greens fresher for longer.
Taking these few steps throughout your week will help you stay on plan and not waste your healthy veggies

Utilize prepackaged and frozen veggies - these shortcuts can make all the difference to staying on plan if you are a busy mom working outside the home!
Some of my favorites are bagged cabbage, lettuces, frozen seasoning blend with peppers, onions, and celery, frozen spinach, broccoli, cauliflower (even riced) and frozen diced sweet potatoes. These are all ways to keep veggies on hand without waste!
