Since I have been working so hard to balance my blood sugars through making healthy lifestyle changes, one of those changes has been limiting my carb intake first thing in the morning. Because insulin resistance is higher in the morning, I need to save things like oats to later in the day when insulin resistance is naturally lower. For me, its as simple as throwing together some ingredients the night before and having a delicious breakfast that is ready in seconds in the morning! This breakfast invokes all the satisfying goodness of a peanut butter and jelly sandwich with the mouthfeel of overnight oats without the need to overload my system with extra carbs first thing in the day. Nobody wants to chase high blood sugars all day long. Now you don't have to worry about that. You can have this delicious breakfast without having to put too much effort or thought into it.
